A New Year, A New Outlook

Every year I, along with most of the population, make certain goals or “resolutions” for the new year that I always tell myself “I’m definitely going to do these things this year -no excuses- this is the year I’m sticking to my word!” But again, much like the rest of the population, it lasts for a little while then I start to slack off.

 

In 2012 I made my resolution to simply not make any resolutions. Let me explain. I decided to simply live my life day to day by doing the things that make me happy and not put these added pressures on myself. Don’t get me wrong, it’s great to set goals for yourself and I do, but I make small, personal and attainable goals.

 

Since I made this non-resolution resolution for myself, I like to start by reflecting back on the previous year and see where my weak points were or where I had struggles and how I dealt with my hardships and one of my goals for the new year can be to look for different ways to handle future hardships etc. Life is all about learning to grow and overcome so I think this is a great place to start.

 

Another big thing is when I allow myself to live my life without the added pressure of “oh I have to go to the gym for at least an hour today” or “I have to prepare all my meals for the following week.” I can just go day by day or a few days at a time. I set goals according to what’s going on in my life and my surroundings at that point in time and what my schedule allows me to do.

 

If you’re someone like me who works non-stop and has very little free time it is very hard to get things done. I guess you could say I am a bit of a workaholic. I have looked back and made one of my realistic goals for this year, at least for the next few months, is to have at least one full day off every two weeks to allow me to spend time with family and friends. Come spring I hope to broaden that goal and have one day off each week. Baby steps.

 

I am very proud of myself for this next one because after 29 years I have finally mastered the art of balancing my checkbook. I downloaded a simple app on my phone and I got into the habit of each time I make a transaction or write a check I immediately put it into my phone’s app. At the end of each week I call my bank and make sure all my transactions match theirs and then I add it into my actual checkbook. Pat on the back for me on that one. My dad would be proud.

 

My huge problem used to be making too many plans with too many people or trying to plan trips that I had every intention on making but then something would come up at work or the real world would get in the way and unfortunately I would have to cancel leaving many people disappointed in me. I’ve decided to handle these situations the same as I do others and not commit to plans in general unless I know 10000% I will be able to commit. Otherwise, expect true Sagittarius fashion of spontaneous trips, gatherings, etc.

 

As someone who has suffered a lot of loss, maybe too much for someone of my age, even though my schedule may not allow me to psychically see my friends or family as much as I would like to at the moment, I make it a point to send handwritten letters, texts, or calls as much as possible to the ones I love to catch up or say a simple “I love you.” or “I miss you.” or “Thinking of you.” We never know what tomorrow will bring so it’s important to not let hectic schedules get in the way of letting people know you care.

 

I have always been one to help others in any way I possibly can. I do it on a daily basis, weekly, monthly…whatever. A lot of people make resolutions to clean out their closets and donate all their clothes and I think that’s awesome! It might be a bit overwhelming though. As someone who has done a lot of that and many times, it does get stressful. And honestly, once you start digging out those clothes, there’s no going back and then you’re left with piles of clothes everywhere saying “I’ll finish it later, I’ve done enough for today. I need to get boxes.” etc… It’s a never ending cycle. You can make it easier on yourself by helping those in need in smaller ways that help out more than you will ever know. The next time you are at a dollar store grab some basic toiletries or even a couple pairs of socks, or the next time you stay at a hotel take those little bottles of shampoo, conditioner, lotion, and soap (you can go to the front desk and say you forgot your razor and deodorant they often have these for free for guests) and bag them up and deliver them to a local homeless shelter. Dollar stores are stepping up their game nowadays so you can find great children’s toys and books and even baby stuff like clothes, bottles, pacifiers, etc. You can donate these to woman’s shelters too.

 

Obviously each person is different. Sometimes people work better under pressure. It is a terrible feeling though when we set these resolutions for ourselves each New Years Eve and then we get down on ourselves like we are failures if we do not follow through. I have loved living my life this way each year with the “come what may” attitude and I hope that you all have a great 2014 filled with success and happiness. Please do not give up on your dreams, but throw the time limits out the window!

1. Goat Cheese with Fresh Dill & Paprika.

 

 

Ingredients:
2 packages of fresh goat cheese, 6 tablespoons of fresh dill, and 6 tablespoons of paprika.

 

Instructions:
Place the package of goat cheese into the freezer to chill.

While the goat cheese is chillin’ in the freezer, finely chop your fresh dill and spread it out a bit on the cutting board to let it dry for a few minutes.

The goat cheese should now be slightly firm. When it is ready, carefully remove the goat cheese from the packaging and gently roll it over the fresh dill, coating it almost completely.

Now pour some Paprika (a few tablespoons should probably do) onto a baking sheet. Give the pan a very slight shake to spread out the paprika a bit. Roll the second cylinder of goat cheese in the paprika until it is covered completely.

Carefully wrap each roll snugly in plastic wrap and chill until it’s time to serve. (The Paprika Goat Cheese will not do well if kept for longer than one to two hours so don’t make it too far in advance). Carefully slice them (easier when they are cool) and serve on crackers or crostini.

2. Chocolate Peanut Butter Pretzel Bites


Ingredients:
1 cup creamy peanut butter, 2 tablespoons butter (softened), 1/2 cup brown sugar, 1 1/2 cups powdered sugar, 48 Pretzel Crisps® Original

Pretzels, 10 oz semi-sweet chocolate (chopped), fluer de sal, to taste.

Instructions:
In a stand mixer, combine peanut butter, butter, brown sugar, and powdered sugar -till well combined.

Roll peanut butter mixture in 1 inch balls and smash in-between two pretzels.

In a medium bowl, microwave semi-sweet chocolate in 15 second increments, until melted.

Line counter tops with wax paper and dip half of pretzel sandwiches in melted chocolate and set on wax paper. Sprinkle with fluer de sal

and let chocolate harden.

Serve immediately or store in an airtight container

3. Smoked Salmon Tea Sandwich Canapes

 

Ingredients:
8 oz package cream cheese, 2 Tbsp Mayo, 1-2 Garlic cloves (pressed), 1-2 Tbsp dill leaves finely chopped (optional), More dill sprigs for

garnish, 4 oz smoked salmon, 1 long baguette (you can substitute this with rye melba toasts too) 2 Tbsp melter butter (if using the

baguette method).

 

Instructions:
Slice bread into ⅓” thick slices on the diagonal.

Place the bread slices side-by-side onto a large baking sheet. Brush the tops with butter. Flip the breads over and brush the other side with

butter. I just use long strokes across multiple slices of bread at the same time. Bake at 350˚F for 5 minutes or until edges are just barely

starting to turn golden. The breads should still be soft in the center.

In a small bowl, combine all of your spread ingredients: 8 oz cream cheese (no need to soften it), 2 Tbsp Mayo, 1-2 pressed garlic cloves,

1-2 Tbsp freshly chopped dill. Mash it all together with a fork.

Spread the cream cheese mix over the top of each bread slice. It’s OK to spread even if the bread is still warm. Top with a piece of salmon

and garnish with dill. If stacking, it’s a good idea to put plastic wrap between the layers so the bread doesn’t get soggy.

4. No-Bake Eggnog Cheesecake

 

Ingredients:
3/4 cup graham cracker crumbs, 1/2 cup sugar, 1/2 teaspoon ground nutmeg, 1/4 cup melter butter, 1 envelope unflavored gelatin, 1/4 cup

cold water, 1 8oz. package softened cream cheese, 1 cup eggnog, 1 cup heavy cream

 

Instructions:
In small bowl, combine graham cracker crumbs, 1/4 cup sugar, nutmeg, and butter; mix well. Press into bottom of 8-inch-square baking

dish; set aside. 
In small saucepan, combine gelatin and water; stir over low heat 3 to 4 minutes, until dissolved. Remove from heat; set

aside. 
In large bowl, with an electric beater on medium speed, beat cream cheese and the remaining 1/4 cup sugar until well blended. Stir

in dissolved gelatin and eggnog until well blended. Refrigerate 8 to 10 minutes, until slightly thickened. 
In a medium-sized bowl, whip

cream. Fold whipped cream into eggnog mixture, then pour over prepared crust, cover, and chill 3 to 4 hours before serving.

 

 

5. No-Bake Nachos

 

Ingredients:
1 bag green and red tortilla chips, 1 can re-fried beans (16 oz), 1/2 head Romaine or  shredded iceberg lettuce,

2 cups shredded Colby jack cheese (or your favorite cheese), 1 cup sour cream, 2 vine-ripened diced tomatoes

 

Instructions:
Place tortilla chips on a few platters. Layer in this order: re-fried beans (you may heat these if you’d like but I leave them cold like a dip so

the chips don’t get soggy as fast), then lettuce, cheese, sour cream and top with tomatoes. You will have leftover chips from the bag.

Dealing With ‘Future Shock’:

 

Future shock is a term used to describe a fear of the future based mainly around scientific and cultural progress. We fear that the future will be too different from what we know, and end up stuck in the past. The solution to future shock is to make an effort to ‘keep up’ with developments by trying out new technologies, going to classes and asking friends to help. Once you’re using an iPad and finding it useful, you may be less scared of the future.

 

 

Accepting Change:

 

Another reason that many of us fear the future is that we are afraid of change, and we worry that things not being the same means that we won’t be as happy. It’s important to learn that change can be a very good thing and bring us new opportunities and adventures. Holiday Gifting on a Budget

Money is tight for many people these days and as a single female in my late 20′s I have mastered the art of gift giving on a tight budget. I am the queen of dollar store finds and can pretty much find a way to make the simplest thing be a very special and unique gift for anyone on my holiday list.

 

This blog is to give those of you out there who have a long shopping list and little funds. Another great thing about these gifts are that they are special because you can put your own twist on them and people really appreciate homemade gifts. Grab the kids or a group of friends and put on some festive tunes and make it a fun group activity too!

 

I will break the gift categories down by age group and what I find to be popular from my own personal gifting experience.

 

 

For the kids (ages 2-4):
Kids at this age are pretty easy, they already have TONS of toys, they’re outgrowing clothes by the day and they probably already own every kids movie known to man. I find with this age group (girls and boys) you can never go wrong with crayons and coloring books. Also, if they have a favorite movie or TV character you can make them a special tree ornament with that character.

 

For Example, my 2 year old niece is obsessed with the movie Tangled. Her birthday just passed and I made noise makers out of one of the characters Pascal using cutout sheet foam from the craft store for $0.50, white card stock, some glue, and black permanent marker.

 

 

 

 

TIP: Replace the noisemaker with a candy cane and tie a ribbon to hang on the tree.

 

 

Ages 5-11:
A lot of people think it’s impersonal to give a child a gift card but honestly, they love being able to go into a store and pick out their own toys, art supplies, etc. A simple $5 gift card to the dollar store allows kids to go in and have the ability to get a few different things that they really want. Money is fun for them too. If you give a kid $5 they will think they hit the lottery and have a field day!

 

TIP: Instead of just giving them a card or gift box with money or a gift card, make the delivery of it even more magical for them! Make a snow globe gift card holder. All you need is a recycled jar of some sort, hot glue gun, glitter, water, (optional) holiday embellishments.

 

 

Instructions:
Glue a strip on the lid of your jar to stand up your gift card. LET IT DRY COMPLETELY. *Optional*If you have any holiday embellishments (mini sleigh bells, ornaments, etc.) you can glue a couple around the card for decoration.
Pour some glitter into your jar then fill it with water.
Put the top on your jar and finish off with a decorative ribbon.

 

 

 

Ages 12-20:
You can do the gift card and money thing for this age group too. You might wanna go a bit higher maybe the $10 range and if you have a Five Below near you, you’ve hit the teenage jackpot! Most teens these days are big technology lovers and five below has tons of tech accessories for super cheap. They are also a great place to get stuff for college dorm rooms and school and craft supplies so it’s pretty awesome. I was in there today actually spent $15 and got presents for my 12 year old cousin, my roommate, two co-workers, and a little something for my dog, and I am sure they are all going to love what I got them. (Especially my dog.)

 

 

Ages 21+: This is a pretty open range so have fun with it!

A popular one among friends and family members are the personalized photo candle holders. These ones are super easy, and cost next to nothing. I love giving these because they’re so special. You can get the basic clear glass candle holders from your local dollar store, WalMart, or even thrift store. You will also need some vellum (parchment) paper, a print out of your photo and modge podge *Hint* a cheap alternative to expensive store bought modge podge is mixing Elmer’s glue and a bit of water.

 

 

 

 

 

Instructions:
Print out your photo onto vellum paper.
Modge podge onto straight glass candle holders.
When dry, put candle in and light.

 

 

 

 

For that person on my list that I’ve used all my resources for and made them everything I could think of and ran out of ideas but I know they like to kick back and enjoy a nice cold beer after a long day, I’ll go to the local pub and spend $7 and grab a 6-pack and make them some festive Reinbeers! All you need is some googly-eyes, glue, brown pipe cleaners, and red cotton-pom balls. *Optional* Red, black, & yellow construction paper (to decorate the box as Santa’s outfit) & cotton balls to line the box.

 

 

 

 

 

 

 

 

 

 

This one is good to give to your girlfriends, sisters, co-workers, anyone who needs a bit of pampering this holiday. It’s relatively cheap, dollar stores are really stepping up their game these days so most of the stuff you might be able to find there. If you aren’t able to find the items at the dollar store – don’t worry, the best part about this gift is that you’re wrapping it in a mason jar so everything is travel size! Go to your local drug store or WalMart or Target and hit the travel size isle and go nuts – everything should be $1 – $2 tops!

Managing Stress From Another World

Modern stress is habitual, and is something that the vast majority of Americans and Britons succumb to in their material driven lives. Whether mildly or overwhelmingly, stress will cast its powers across most of us at some stage in our lives, often increasingly as we get sucked into a pattern of working and living that gradually strips us of our individuality.

 

Stress reduction has therefore become a “necessary” antidote industry. We may console ourselves by saying that our lives are fast paced; that this is what modern living is all about and we must pursue it frenetically; that people in those poor countries which have not adopted the Anglo-American way are just backward and will catch on eventually. But that is not just a consolation; it is both an illusion and a denial, and helps stress reduction in no way at all.

 

It is an illusion first of all that the average consumer has a fast paced life. A commuter may sit in a train twice a day, to and from their place of work; that train may move at a fast pace, but the commuter does not. They just sit there, their minds going over the same themes as always; last night’s tv, tonight’s tv, wishing they could have had another hour’s sleep or wishing they were already home and tucked up for the night’s slumber, or the day’s boredom at work behind them or before them. Drowned in tedium and repetition, the vacuum left in their daily lives is gradually filled with stress, as if it had a supporting role in their existence.

 

A tiring and repetitious daily routine can be a breeding ground for discontent and unhappiness, the real reasons for modern stress. If that routine is full of creativity, and control over one’s own actions, then it may not be a source of stress at all, or discontent. If, however, the individual is suppressed, then it can be a very different story. Most people are employees, whose lives are dictated by those above them and with no or little scope to think and do for themselves. They are particularly vulnerable to modern stress.

 

Caught up in the modern way of life, it is very easy to lose connection with yourself as an individual, for your individuality can be suppressed from all sides. I am sure I am not alone in having experienced that. I had lived the zombie like existence for over 20 years, and despite the fact that I had some very stimulating jobs, I had, almost unknowingly, lost track of life as it should be. Then in 1995, I packed it all in and started my own business, and started the long haul to win back my individuality. But it was 1998 before I started to fully appreciate again what having control over your own life really meant. The 20 plus years were a blur; where had I been all that time?

 

One of the problems with modern stress is that it becomes a focus, along side the focus on purely material things such as the “need” to have a new car, a new house, the best clothes, the best TV and so on. Modern stress is a consumer product in itself, part of the material razzmatazz, that keeps the consumer in his or her place: a consumer, not a doer or a thinker; someone who plays by the rules and spends and borrows and spends and borrows to relieve themselves of the tedium and chase the shadow of achievement. Not real achievement; just its shadow.

 

That is not to say, though, that there is no relief from stress in the Anglo-American world. Those who are able to escape back to the real world now and again, and who can exercise sufficient self control regularly enough, will find that stress relatively easy to keep under control.

 

So how do we get to this other world, where we can manage our stress? There are portals all around you. Anything that will take your mind away from the self focus is a portal into this other world. Spending time with your children, and seeing life through their eyes for a while every day; the joy of discovery and play; but not as a drain upon your resources, and not as a part of your tedium. Spending time appreciating the wonders around you, the joys of nature, the little miracles that are within a short distance of where you stand or sit. Spending time traveling, helping others, seeing the true misery of people who are under the real stress caused by extreme poverty and disease, not the packaged consumer stress that we tend to think of.

 

This “other world” is a world of perspective. It is a world you used to know, but have somehow lost through lack of time. Yet, there was never any lack of time; that was an illusion too. This “other world” is also a world where you make the choices, consciously, not have them dictated to you by employers or weariness. A few simple choices each day can distract you enough to bring some relief to consumer induced stress. Fill the vacuum with your choices, and stress will not find such an easy way in.
